Recipe: Your Own Pork Fried Rice

If you've got leftover rice, this is a very easy dinner and you can add a whole lot of vegetables. There are many ways that you can flavor fried rice and these are just a few. As always, once you know how to fry rice (essentially cooking rice and vegetables together in a pan with some spices or flavors and maybe some eggs or leftover meat) you can play with your favorite flavors and make whatever tastes good to you.

You will need:(serves 3-4)

  • 3 tablespoons of canola oil
  • 1/2 cup of scallions
  • 1 can of baby corn (canned corn works fine and it's more likely to already be in your pantry)
  • 1/2 lb of sugar snap peas, green beans or frozen peas, washed or thawed
  • 1/2 lb of mushrooms (if you don't like mushrooms, substitute another vegetable like peppers)
  • Salt and Pepper
  • 2 cups of cooked brown rice
  • 1 teaspoon of powdered ginger
  • 3 tablespoons of soy sauce
  • 1 tablespoon of sesame oil
  • 1 teaspoon of red pepper flakes (optional)
  • 2 eggs (optional)
  • Cooked or leftover chicken or pork (works well with Sweet and Spicy Pork)

To Make:

  1. Heat 1 tbsp of canola oil in a large skillet, add the vegetables along with a pinch of salt and pepper and cook for 5 minutes
  2. In the meantime, mix the ginger, soy sauce, sesame oil and red pepper flakes
  3. Add the rest of the canola oil, rice and sauce, mixing well
  4. Cook for 5 minutes, stirring occasionally
  5. Add eggs or meat and mix thoroughly
  6. Allow the eggs to cook all the way through (there will be no more clear egg white left), stirring occasionally so the bottom doesn't burn. Cover the pan for faster cooking
