Recipe: Whole Wheat Pizza with White Sauce

Ingredients for Dough:
3 cups whole wheat flour

2 ½ tsp active dry yeast

1 tsp evaporated cane juice crystals (can substitute sugar)
2 ½ Tbsp extra-virgin olive oil
1 cup boiling water
1 Tbsp Italian seasoning
2 tsp Garlic Powder
1 tsp Crushed Red Pepper

1 tsp sea salt

 

Ingredients for Sauce:
2 garlic cloves
¼ tsp Crushed Red Pepper
¼ cup milk
½ tsp extra-virgin olive oil
1 tsp butter
1 ½ tsp whole wheat flour
½ tsp sea salt

 

Other Ingredients:

2 cups Mozzarella cheese

2/3 cups Parmesan Cheese

Any custom toppings, if desired

 

Instructions for Dough:

1.      In a large mixing bowl, combine the boiling water, yeast, and 1 tablespoon of olive oil. Let sit about 5 minutes until the mixture begins to rise.

2.      Add 1 ½ cups flour and the sea salt. Mix by hand until smooth. Continue adding the rest of the flour, about ¼ cup at a time, while working the dough lightly. When you are finished the dough should be smooth but still a little sticky. Knead dough lightly.

3.      Oil a large mixing bowl with the remainder of the olive oil. In bowl, coat the dough with the oil. Cover dough with plastic wrap and place in a warm, dry location until the size doubles, about 1-2 hours.

 

 

Instructions for Sauce:

1.      Heat the olive oil in a pan and the add peeled, crushed garlic cloves and red chili pepper, and cook until they are golden brown. Leaving the olive oil in the pan, remove garlic and red chili pepper and place in a food processor.

2.       Add the butter to the olive oil remaining in pan. When it has melted down add 2 tbsp of whole wheat flour and stir on a medium heat for a 3-5 minutes, until the flour and butter combine and begin to fry. Add the warm milk and sea salt and stir continuously. While stirring, allow it to simmer until the sauce thickens. Remove sauce from heat and allow it to cool.

3.      Place cooled sauce in food processor along with the garlic from the first step and blend until smooth.

 

 

Instructions for Pizza:

1.      Heat oven to 400 F.

2.      Roll out dough to desired thickness. Use a small amount of flour of it is too sticky.

3.      Coat a baking pan or stone with oil and transfer dough.

4.      Spread the white garlic sauce over the dough.  Add cheese, distributing evenly. Add toppings if desired.

5.      Bake 18-22 minutes or until done; it is done when the crust begins to turn golden brown.
