Recipe: Veggie Omelette

Omelettes are classic breakfast foods. It's really up to you to add things that you like. This is just one of our favorites, especially with Jalepenos thrown in.

You will need:

  • 4 Eggs
  • 1/3 cup of milk
  • 1 whole pepper or 1/2 of a green pepper and 1/2 of a red pepper, diced
  • 3 scallions sliced or 1/2 of an onion, diced
  • A few florets of broccoli (preferably already steamed or boiled), cut into bite sized pieces.
  • Salt and Pepper

Optional:

  • Jalepenos
  • A dash of hot sauce

To Make:

  1. Whisk together the Eggs and Milk
  2. Heat the pan over medium high heat.
  3. Spray the pan with no-stick spray
  4. Add the eggs, mixing them in the hot pan for the first 10-20 seconds as if making scrambled eggs. Stop mixing before the eggs are fully cooked. This allows you to cook more of the eggs and still get the Omlette shape without having to flip the eggs.
  5. Add your vegetables and a pinch of Salt and Pepper over the top of the Omlette while it is still cooking (and a dash of hot sauce if you are using it).
  6. Slide your spatula around the edges to loosen the Omlette once it has fully cooked through. Pick up the pan and slide the Omlette onto your plate, folding it in half.
  7. Cut in half to make single portions.
