Recipe: Tomato and Feta Omelette

To cook for 2, double the recipe 

You will need:

  • 1 tbsp of olive oil
  • 1 tomato, seeded and chopped
  • 1/2 tsp of Oregano
  • 2 eggs
  • 1/4 cup of milk
  • 1/4 cup of crumbled feta cheese
  • 2 scallions, sliced

To Make:

  1. Heat olive oil in a pan over medium high heat
  2. Add the tomato and oregano and allow to cook for a few minutes
  3. Beat together eggs and milk
  4. Add eggs to the pan, whisking for the first 10-20 seconds
  5. Allow eggs to cook until set
  6. Sprinkle feta over the top
  7. Loosen edges of the omelette and remove to a plate, folding it over itself
  8. Add sliced scallions over the top and serve
