Recipe: Sweet and Spicy Pork

This is easy, flavorful and if you keep a well stocked kitchen, you probably already have everything you need to make the sauce and vegetables, which means there is very little planning involved.

You will need:

  • 1.5 lbs of pork. You can use any cut you like, cubes or chops work well
  • Soy Sauce
  • Sesame oil
  • Red pepper flakes
  • Powdered Ginger
  • Honey
  • 1 lb of mushrooms, washed and sliced
  • 1 or 2 heads of broccoli, washed and cut into bite sized pieces
  • 3 or 4 carrots, washed, peeled and grated
  • 2 cups (uncooked) of brown rice
  • 4 cups of water

To make:

  1. Combine 2/3 cup of soy sauce, with 1/3 cup of honey (about 5 tablespoons), 3 teaspoons of ginger powder and 1-2 teaspoons of red pepper flakes depending on your preferred spiciness. Taste and add honey or soy depending on whether you prefer sweet or salty.
  2. Pour 1/2 the sauce over the pork and allow to marinate for 30 minutes (you can marinate longer if you like)
  3. In the mean time, bring water to a boil and add rice. Turn the heat to a simmer, place the lid on the pot and let it cook for 40 minutes (or according to instructions)
  4. Brown the pork in a pan over high heat, 2-3 minutes, then flip and repeat until all sides are browned.
  5. Turn the heat down to low, mix in vegetables and cook, with a lid on, for 15-20 minutes (or until the pork is done)
  6. Serve the veggies and Pork over rice with extra sauce on the table to pour over the top
