Recipe: Summer Steak Tip Salad

Serves 4

Ingredients for the Steak Tips:

  • 1 pound steak tips
  • 1/3 cup soy sauce
  • 1/3 cup olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, minced
  • 1 tablespoon fresh thyme, leaves only
  • 1 tablespoon maple syrup
  • 1 tablespoon tomato paste
  • 1 teaspoon freshly ground black pepper

Ingredients for Salad

  • ¼ red onion, sliced thin
  • ½ cucumber, peeled, seeded, and cut into ¼ inch slices
  • 1 large red tomato, seeded and cut into large chunks.
  • ½ yellow bell pepper, seeded and cut into ½ inch pieces
  • 4 cups fresh baby spinach, rinsed and dried
  • 2 tablespoons fresh parsley
  • 4 tablespoons dressing (vinaigrette works well here)

Instructions for the Steak Tips:

  1. Combine the soy sauce, olive oil, garlic, herbs, syrup, tomato paste, and pepper in a bowl and stir until the syrup dissolves.  Pour the marinade into a zip top bag and add the steak tips.  Remove as much air from the bag as possible, seal, and refrigerate for 1-2 hours, flipping the bag halfway.
  2. Remove the steak tips from the marinade and pat dry with paper towels. 
  3. Heat a pan to medium-high and add a little oil.  Sear until well browned, 4-5 minutes per side.
  4. Remove the steak from the pan and allow it to sit for 5 minutes.

Instructions for the Salad:

  1. Toss together the onion, cucumber, tomato, and bell pepper with the spinach and parsley.  Dress and portion onto four plates.  Top with the steak tips and serve.
