Recipe: Steak Salad

For those looking to get a little red meat with their daily vegetables, this is a perfect combination.  It is not too heavy, fills you up with all those healthy vegetables, delicious and hits all the food groups.  

You will need:

  • 1 lb of steak or beef (for 4 people)
  • Salt and Pepper
  • 1/2 sliced red onion
  • 2 Red, green or yellow peppers, sliced
  • 4 cups of lettuce
  • 2 handfuls of cherry tomatoes
  • 3/4 cup of Goat cheese
  • 1 cup of Red wine vinegar
  • 4 tablespoons of lemon juice
  • 4 tablespoons of honey
  • 2 tablespoon of olive oil
  • pinch of salt and pepper

To Make:

  1. Flavor the steak with salt and pepper and cook on the grill, skillet or in the oven until done to medium.  See this guide for cooking times.  Remove steak and let it cool.
  2. Cook onions and peppers until soft.
  3. Cut steak into bite size pieces.
  4. Place lettuce in a large bowl topped with peppers, onion, tomatoes, cheese and steak.
  5. Combine red wine vinegar, lemon juice, honey and salt and pepper in a bowl and thoroughly mix.
  6. Add to an old (but clean) salad dressing bottle and add olive oil (use a funnel to help you pour into the bottle.
  7. Shake to combine and drizzle over the top.  Save what you don't use in the fridge.
