Recipe: Southwestern Style Black Bean Toast

Note: This Whole Wheat Loaf recipe takes 2 hours to prepare, so if you think you’ll be in the mood for some quick toast, it’s best to prepare the loaf in advance. I try to make one each week, so that I always have a fresh loaf on hand.  This recipe can be doubled to create a second loaf, which will keep for a couple of weeks if refrigerated, and longer if frozen.

 

Ingredients for Whole Wheat Loaf:

¼ tsp active dry yeast

1 cup warm water

2 tsp evaporated cane juice        

2 cups Whole Wheat Flour

1 tsp sea salt

 

Ingredients for Toast:  

1 loaf (8 slices) thick-sliced whole wheat bread

2 cups black beans

2 cups baby spinach

1 cup spicy tomato salsa

1 cup Shredded Cheddar Cheese and/or Sour Cream

4Tbsp Fresh Cilantro, chopped

 

Instructions for Whole Wheat Loaf:

1.      Preheat oven to 400 F.

2.      In a small mixing bowl, add sugar, active dry yeast and warm water. Mix together and wait until the yeast begins to become puffy.

3.      Place the whole wheat flour and sea salt into a separate, larger mixing bowl. Using a mixer, slowly add the yeast mixture and beat in. If the loaf is to dry after the mix is added, slowly add more warm water until the dough rolls in a ball and is soft enough to work. The dough should form a nice sticky ball within your bowl (if it is too dry, try adding small amounts of warm water and kneading it until it is soft enough to work with. It should be a little sticky, but not too much or too wet).

4.      Remove your dough ball and place it on a lightly greased baking sheet. Cover with a sheet of waxed paper or plastic wrap and place in a warm area to rise until the dough is twice as large—about 45-60 minutes.

5.      Punch down the loaf and roll it into a ball shape again and let it rise for 20 more minutes.

6.      Place in preheated oven and cook for 40-45 minutes.

 

 

Instructions for Toast:

1.      Simmer beans in a small saucepan over medium heat until heated through, about 5 minutes.

2.      Place the bread slices in a conventional or toaster oven and toast until the slices reach your desired level of brownness, about 3-8 minutes. Flip halfway through to ensure even toasting.

3.      Layer spinach, beans, salsa and cheese and/or sour cream.  Top with fresh chopped cilantro.
