Recipe: Sirloin Tips and Green Beans


            2 lbs. beef sirloin tips

            1 cup soy sauce

            1 cup water

            1 Tbsp olive oil

            1 Tbsp honey

            ¼” raw ginger, shaved

            ½ tsp sea salt

            ¼ tsp black pepper

            1/8 tsp crushed red pepper

            ¼ lb. green beans

            ¼ cup almonds

            1/8 cup sesame seeds



1.      Heat oven to 350 F.  On a baking sheet, toast sliced almonds and sesame seeds together, shaking up frequently.  Do not allow them to brown.  Set aside to cool.

2.      In a large mixing bowl mix soy sauce, water, olive oil, honey, raw ginger, sea salt and black and red pepper. Add steak tips to marinade and toss until fully coated. Then, using an airtight container or a sealable plastic bag, marinade the steak tips in the refrigerator for at least one hour, longer if desired.

3.      When the steak is properly marinated, place a skillet over high heat. Transfer the steak and half of this marinade into the skillet and cook about 8 minutes on each side.

4.      Meanwhile, wash the green beans and slice off the ends.

5.      Reduce the heat to medium and add the green beans. Then cook for about 5 more minutes, stirring frequently, until just undercooked. Add more marinade as needed.

6.      Add the toasted almonds and sesame seeds to the saucepan as well as any remaining marinade. Stir well and cook another 3-5 minutes until the green beans are al dente and serve warm.
