Recipe: Simple Grilled Chicken

So many people already eat chicken, it makes sense to have a few good chicken recipes. One of the easiest ways that you can cook chicken is on the grill. Pair it with a salad and you've got a quick and easy meal or spice it up with some cooked vegetables for a slightly more elaborate dish. I'll pair it here with sauteed Green Beans and Mushrooms.

You will need:

  • 4 Fresh* Chicken Breasts
  • 1/2 an onion (optional), diced
  • 2 lbs of Green Beans, washed and ends removed
  • 1 lb of Mushrooms, washed and sliced
  • 2 cloves of garlic, minced
  • Olive Oil, Salt and Pepper

*If you are using frozen chicken, thaw it thoroughly so that it will cook evenly, either by taking it out of the freezer in the morning or letting it thaw in cool water for 15 minutes to a half hour before cooking.

To Make the Chicken:

  1. Turn the grill on to medium-high heat
  2. If you have thick cuts of chicken, you may want to cut it so that it is 1/2 as thick to ensure even cooking
  3. Add salt and pepper to taste over the uncooked chicken
  4. Place chicken on heated grill and cook for 5-6 minutes, covered. Flip and cook again for 4-5 minutes
  5. Remove from the grill and serve

To Make the Green Beans and Mushrooms:

  1. Add 2 tablespoons of olive oil to a large pan over medium high heat
  2. Add onion (if you are using it) and cook, stirring occasionally, until it starts to turn clear
  3. Add beans with a pinch of salt and pepper and cook for 5 minutes, stirring occasionally
  4. Add mushrooms along with a drizzle of olive oil and a pinch of salt and pepper if necessary
  5. Cook, stirring occasionally, until mushrooms are tender, about 5-10 minutes. Add minced garlic and cook for another 3 minutes
  6. Serve
