Recipe: Scrambled Egg Casserole


            12 eggs

            2 cups Milk

            1 cup cheddar cheese

            8 ounces bacon and/or sausage

            ½ green bell Pepper

            ½ red bell Pepper

            ½ Yellow onion

            6 slices whole wheat bread



1.      Preheat oven to 350 F.

2.      In a large mixing bowl, whisk the eggs and milk together until thoroughly blended.  Stir in cheddar cheese and continue to mix until blended.

3.      Heat a small skillet over medium-high heat. Cook bacon and/or sausage through about 3-5 minutes, flipping halfway through. Transfer meat to a sheet of waxed paper or a paper towel and allow to cool.

4.      Dice the peppers and onion and add them to the mixing bowl.

5.      Tear the whole wheat bread into small, half-inch cubes and add them to the mixing bowl.

6.      Take your cooled bacon and/or sausage and dice into small pieces.  Add to the mixing bowl and mix thoroughly.

7.      Pour the final mixture into a lightly oiled 9x13” casserole pan and bake for 60 minutes at 350 F. Allow to cool before enjoying.
