Recipe: Salmon Salad
It's been said before, but I'll say it again, Salmon is superfood. According to everyone. If you have leftover salmon, throw it on top of a salad (before it's no good anymore!). For example, Honey Mustard Salmon can be put on top of a salad with a honey mustard dressing and you've got yourself a lunch.
You will need:
- 4 oz of Leftover Salmon (for 1 person)
- A Basic Greens and Veggies Salad topped with your favorites
- 1 spoonful of Goat cheese
- 1/2 cup of Fruit sliced into bite sized chunks such as orange, grapes or apple
- 1 tablespoons of honey
- 1 tablespoons of dijon mustard
- 2 teaspoons of balsamic vinegar (optional)
- 1 tablespoons of olive oil
To Make:
- Build your salad with fruits, veggies and salmon
- Combine honey, mustard and balsamic vinegar (if using), then slowly add olive oil while whisking.
- Drizzle dressing over the top.
