Recipe: Quick Veggie Scramble

One of the many great things about Eggs is that they can be used as a vehicle for vegetables at a time when many people don't eat them, i.e. breakfast.  And they can be quick enough to make to suit even people who don't like to spend a whole lot of time on breakfast.  To make morning eggs and vegetables easy, cut up a bunch of your vegetables when you buy them so that you can just throw some veggies in the pan before the eggs.

You will need:

  • 2 eggs
  • 2 tablespoons of milk
  • 1 tablespoon of olive oil
  • 1/4 cup of broccoli, chopped
  • 1/4 cup of zucchini, sliced
  • 2 tablespoons of diced onion
  • salt and pepper

To Make:

  1. Beat eggs and milk together.
  2. Sweat vegetables in a pan with olive oil and a pinch of salt and pepper.
  3. Add egg mixture and combine, stirring consistently so eggs don't burn.
  4. When eggs are cooked through remove to a plate and eat.
