Recipe: Pesto Chicken and Rice

The great thing about pesto is that even most store brands are all natural, so you don't have to make your own. Plus, a little will go a long way, so a jar of pesto should last for a while.

You will need:

  • 1 leftover chicken breast, cut into bite sized chunks
  • 1 cup of brown rice cooked
  • 1 plum tomato, seeded and diced
  • 2 tablespoons of pesto
  • 1/4 cup of water
  • 1/4 cup of Greek yogurt or cream

To make it:

  1. Cook rice according to directions
  2. Add rice, pesto and chicken and water to a pan over medium heat.  If necessary, add more pesto to your liking.  
  3. Simmer and mix to allow ingredients to combine.
  4. Add tomato and yogurt or cream.
  5. Mix and allow the ingredients to heat together.
  6. Eat or refrigerate and transport in Tupperware.
