Recipe: Meatballs

These are pretty easy.  They hold up well in the freezer too, so make a bunch and freeze what you don't eat.  

 
You will need:

  • 1 lb of ground beef
  • 1 lb of ground pork
  • 1 yellow onion, diced
  • 2 cloves of garlic, minced or pressed
  • 2 tbsp of dried parsley
  • 1 tbsp of dried oregano
  • 1 tbsp of salt
  • 1 tsp of pepper
  • 2 eggs
  • 1 cup of quick cooking oats
  • 2 tbsp of olive oil

To Make:
Mix all the ingredients except olive oil.  If you didn't read the whole sentence and mixed the olive oil, no worries.  Just get 2 more tbsp of olive oil and heat that in a pan.  Form the meat into balls and brown in the pan.  Remove from the pan into a baking pan (greased with cooking spray).  Bake at 325 for 30 minutes.
