Recipe: Leftover Chicken Salad

This is a quick and easy lunch that you can make the night before you head to work, or even just throw the components together in tupperware in the morning so that you can build it at work. It's that simple. 

You will need:

  • Leftover chicken, still cold, about 1 breast, cut up into bite sized chunks
  • A handful or two of your favorite lettuce. We like to use Romaine or Baby Spinach.
  • 1 carrot, sliced
  • 1 whole tomato, sliced or several grape or cherry tomatoes
  • 2 spoonfuls of sliced almonds
  • A few sliced grapes
  • 1/4 cup of Feta cheese
  • 2 tablespoons of your favorite dressing. We recommend a balsamic dressing.

To Make it:

  1. Wash all the vegetables.
  2. Break up the lettuce (if necessary) and place it as the base of your salad.
  3. Peel and slice the carrots.
  4. Slice the tomatoes and grapes.
  5. Cut the cold chicken into bite sized chunks.
  6. Add all ingredients to the salad and mix it together with your favorite dressing.
