Recipe: Grilled Porto Burgers


6 Whole Wheat Rolls

6 Portobello Mushroom Caps

1 cup balsamic vinegar

1 cup olive oil

¼ cup water

1 tsp sea salt

½ tsp black pepper

½ cup baby spinach

1 onion, sliced

1 tomato, sliced

`           6 slices of cheese



1.      Clean mushroom caps with a dry paper towel. Chop off the stems and discard.

2.      In a marinating tray or a large sealable plastic bag, combine balsamic vinegar, olive oil, water, sea salt and pepper. Toss in the mushrooms and see that they are fully coated. Allow to marinate as desired.

3.      Grill mushrooms over medium heat about 20 minutes, flipping halfway through.  If desired, add the cheese and grill one minute more. Remove from grill.

4.      Toast whole wheat rolls.

5.      Layer sliced onion, tomato, spinach and mushroom onto toasted whole wheat roll.
