Recipe: Fired Up Grilled Cheese

Ingredients of Whole Wheat Loaf:

¼ tsp active dry yeast

1 cup warm water

2 tsp evaporated cane juice        

2 cups whole wheat flour

1 tsp sea salt

           

 

Instructions for Whole Wheat Loaf:

1.      Preheat oven to 400 F.

2.      In a small mixing bowl, add sugar, active dry yeast and warm water. Mix together and wait until the yeast begins to become puffy.

3.      Place the whole wheat flour and sea salt into a separate, larger mixing bowl. Using a mixer, slowly add ½ cup of the yeast mixture and beat in. If the loaf is to dry after the one cup is added, slowly add more warm water until the dough rolls in a ball and is soft enough to work. The dough should form a nice sticky ball within your bowl (if it is too dry, try adding small amounts of warm water and kneading it until it is soft enough to work with. It should be a little sticky, but not too much or too wet).

4.      Remove your dough ball and place it on a lightly greased baking sheet. Cover with a sheet of lightly oiled plastic wrap and place in a warm area to rise until the dough is twice as large—about 45-60 minutes.

5.      Punch the loaf down and roll it into a ball shape again, and then let it rise for 20 more minutes.

6.      Place in the preheated oven and cook for 40-45 minutes.

 

 

Ingredients for Fired Up Grilled Cheese:

2 Slices whole wheat bread

            2 Slices pepper-jack cheese

            2 Tbsp hot salsa

            2 Tbsp sour cream

            1 Tbsp butter, softened

            Fresh chive stalks

 

Instructions:

1.      Coat a skillet with oil or non-stick spray and place over medium heat.

2.      Butter one side of each piece of whole wheat bread. Place one piece of bread, butter side down, on the skillet and layer with salsa and pepper-jack cheese and place the second piece of bread, butter side up, on top.  Press lightly with a spatula.

3.      Cook sandwich over medium heat, about 2-3 minutes on each side until cheese is melted and bread is browned. Remove the sandwich from heat and allow to cool for 1-2 minutes.

4.      Slice the sandwich in half.  Place a dollop of sour cream in a ramekin or on a plate and garnish with stalks of fresh chive.  Spread on top of your sandwich or use as a dip.
