Recipe: Easy Edamame Salad


1 cup shelled edamame

1 sweet red pepper

¼ Vidalia onion

½ cup bean sprouts

¼ dried cranberries

1 Tbsp lemon juice

1 tsp balsamic vinegar

½ tsp sea salt

¼ tsp ground black pepper

1 Tbsp cilantro leaves




1.      Dice the sweet red pepper and Vidalia onion finely and place pieces in a salad bowl.

2.      Add edamame, bean sprouts, dried cranberries, lemon juice, balsamic vinegar, sea salt and ground pepper. 

3.      Chop the cilantro leaves and add them to the bowl as well, then mix lightly with a spoon.

4.      Serve fresh!
