Recipe: Country Baked Chicken and Bacon Fried Brussel Sprouts

Ingredients for Country Chicken:

            4 skinless boneless chicken breasts

            1 cup extra virgin olive oil

            ¼ cup red wine vinegar

            ¼ cup lemon juice

            1 tsp evaporated cane juice

            ½ tsp sea salt

            ½ tsp basil

            ½ tsp oregano

            ½ tsp marjoram

            ½ tsp thyme

            ½ tsp rosemary

            1/3 tsp red chili flakes  

1 tsp minced garlic or garlic powder

            1 Tbsp parsley

            1 tsp salt

            1 tsp black pepper

            2 cups dry bread crumbs



Ingredients for Brussel Sprouts:

            6 bacon strips     

½ lb. fresh brussel sprouts

            ¼ cup extra virgin olive oil

            1 tsp sea salt

            ¼ tsp black pepper

            1 fresh garlic clove, minced




1.      Preheat oven to 350 F.

2.      In a large mixing bowl, mix the extra virgin olive oil, red wine vinegar, lemon juice, sugar, sea salt and other herbs. Add chicken breasts to the bowl and then toss until thoroughly coated.

3.      Place a piece of waxed paper over a level surface and cover with crumbled bread or crackers. Take each chicken breast from the bowl individually and roll in bread crumbs until each is completely covered.

4.      Place your coated chicken breasts on a lightly oiled baking sheet and bake for 30 minutes.

5.      While the chicken is baking, heat a skillet over medium heat.  Add bacon strips and fry until just undercooked, 6-8 minutes, flipping halfway through.  Remove bacon from skillet and set aside atop a paper towel to cool.
