Recipe: Chicken Kebobs

These are easy and get you grilling vegetables without a whole lot of extra work.

 You will need:

  • 4 boneless skinless chicken breasts cut into one inch cubes.
  • 1/3 cup of fresh lemon juice
  • 2 sprigs of fresh rosemary or 2 teaspoons of dried rosemary, crushed
  • 2 cloves of garlic, crushed
  • A pinch of salt and pepper
  • 1/4 cup of olive oil
  • 2 red bell peppers, cut into 1 inch squares
  • 1 lb of cherry tomatoes
  • 2 yellow onions, cut into approximately 1 inch squares
  • 1 can of artichokes, cut if necessary
  • Skewers (soaked in water if they are wooden)

To make:

  1. Mix lemon juice, rosemary and salt and pepper in a small bowl.  Whisk in olive oil.
  2. Pour half over the cut chicken and allow to marinate. Reserve other half for vegetables.
  3. Place vegetables in a bowl and cover with other half of marinade.
  4. Allow both to sit for 30 minutes.
  5. Build your kebob by placing meat onto the skewers separated by vegetables.  
  6. Cook on the grill at high heat until chicken is done all the way through, turning occasionally.
  7. Can be served with fresh salad or as toppings to a salad.
