Recipe: Banana Breakfast Bread

This recipe is loaded with protein and potassium so you can start your day with the energy you need, whether you are planning to spend your day hiking, biking, out with the kids or working up a storm at the office.  Still feel that you’ll need an extra energy boost? Spread thinly with a little peanut butter to amp up your protein supply.

 

 

Ingredients:

2 Bananas

½ cup Brown Sugar

2 Tbsp Canola or Sunflower Oil

1 Tsp Pure Vanilla Extract

½ Tsp Ground Cardamom

1/16 tsp Nutmeg

2 Cups Whole Wheat Flour

1 Tsp Baking Soda

1 Tsp Baking Powder

1/3 cup chopped mixed nuts (such as walnut, Brazil, almond, pecan, pistachio, etc.)

 

 

Instructions:

1.      Preheat oven to 375 F. 

2.      Mash bananas and mix with brown sugar, oil, pure vanilla extract, cardamom and nutmeg. Blend thoroughly.

3.      In a separate mixing bowl combine flour, baking soda, baking powder and mixed nuts. Then blend the two mixtures together, stirring gently until just mixed. 

4.      Spoon into lightly oiled bread pan and bake for 50-60 minutes or until knife comes out clean.

 

Makes 1 Loaf
