Hummus a delicious and rather healthy snack made out of chickpeas.  This is another vegetarian option that comes through with some protein.  Also, once you know how to make hummus, you can use it for just about any kind of dipping that you like.

You'll be happy to remember that chickpeas are a good plant based source of protein.  The great thing about meals like this is that they can be recycled as a base for lunch the next day with hardly any extra work.  Just add some meat and maybe a few more vegetables and you're go...
